My name is David Hoehler, and I’m a full-time knifemaker located in Sheffield Beach on the breathtaking North Coast of KwaZulu-Natal, South Africa. From the earliest days I can recall, I’ve been captivated by knives. At the tender age of 6, I received my very first Swiss army knife, and from that moment, a knife has been a constant presence in my pocket. In a previous life, I served as a professional chef for a period spanning eight years. During those culinary adventures, I held a knife in my hand for thousands of hours. This immersion in the world of food and cooking deepened my passion for knives. Over time, I came to the realization that the average production knife fell short of my expectations. I wanted more than what was readily available; I yearned for knives that could meet the exacting demands of a chef. My culinary background provided me with invaluable insights into how knives are used and the performance expected from them.

Today, I find myself crafting knives that I, as a chef, would be delighted to have in my kitchen. My dedication to the art of knifemaking has evolved into a one-person operation where I meticulously handcraft each blade from start to finish. I offer a diverse array of knife designs that cater to various culinary needs, ensuring that there is a perfect tool for every kitchen task. Among all the knives I create, my heart belongs to the classic 8″ or 210mm chef’s knife, a timeless and versatile companion for any chef.
