Chef Knife Making Course

In this online course, you will learn how to make a 210mm Western style chef knife from start to finish using the stock removal method.
Throughout this course, you will be guided through the process of creating a beautiful and functional chef knife that you can be proud to use in your kitchen.

The course will cover everything from selecting the right materials to designing the perfect shape and size for your knife. You will learn how to shape and sharpen the blade, create a comfortable handle, and even personalize your knife with your logo.

The course is presented by former chef and Knifemakers Guild of South Africa member David Hoehler who is a full time knifemaker with close on a decade of experience who will provide step-by-step instructions and guidance throughout the process. You will have the opportunity to ask questions and get feedback as you work on your knife.

Whether you are an experienced Knifemaker or just starting out in the hobby, this course will provide you with the skills and knowledge you need to create a one-of-a-kind chef knife that is both functional and beautiful.

Hoehler Handmade Chef Knife Course

Course Content:

Module 1: Theory Designing of a 210mm chef Knife. Workshop Tour and Machines. Abrasives. Body Position

Module 2:  Profiling and Heat Treating. Transferring design to steel. Cutting out the rough profile. Grinding to rough profile. Refining final profile. Laying out the handle. Layout of 5mm corby bolt/ Interscrew holes. Layout of 8mm weight reduction/Glue Bridge holes. Drilling 5mm and 8mm holes. Heat Treating

Module 3: Grinding Bevels and prepping for handsanding. Marking centre line. Establishing centre line. Grinding in the hollow. Starting the main bevel. Establishing the distal taper. Flattening the handle. Machine finish, preparing for handsanding

Module 4: Handle selection and materials, handsanding, logo application Handle material selections. Scribing and drilling the handle for the 5mm corby bolt/ interscrew. Handsanding. Taping up the blade. Applying Positive 20 for the logo. rough shaping profile of the handle. Chamfering the front of the handle. Drilling the counter sink holes for the corby/interscrews. Roughing up the inside of the handle. Exposing the logo. Etching the logo. Final tape up

Module 5: Fitting the handle. Installing the corby/inter screws. Dry fit. marking and cutting tape for the front of the handle. Roughing up the tang. Preppinng the handles for epoxy. Final glue up. Shaping the outside perimeter of the handle. Grinding in guide lines for the handle shaping. Refining the contures on the handle

Module 6: Final handle shaping and final finishes. Slack belt method of shaping (Option 1 of shaping). Fling the inside of the handle by hand (Option 2 for shaping). Handsanding the rough file marks/Slack belt finish. Shaping the radius of the choil. Refining the rough choil radius. Sanding the choil radius. Polishing the choil. Refining the inside of the handle. Polishing the handle. Rounding the spine. Polishing the spine. Final Polish. Removing the tape. Cleaning the blade
